Healing Curry Spices
Spices, like those in curry powder, have the power to heal your digestion, especially when consumed on a daily basis. Here are few benefits of the healing spices in curry:
Coriander – Soothes upset stomach, aids digestion
Cumin – Aids indigestion, diarrhea, flatulence
Fennel – Reduces indigestion and flatulence
Turmeric – Reduces inflammation, aids digestion, anti-infection, anti-oxidant, simulates bile production
Recipe
1 yellow onion, chopped
2 cloves garlic, minced
1 inch giner, peeled and minced
3 Tbsp. curry powder
2 Tbsp. maple syrup
1 Tbsp. lime juice
1 can coconut milk
1 sweet potato, diced
1 c. cauliflower, chopped
2 c. broccoli, chopped
½ c. peas
Tamari, to taste
Basmati rice
1 lime, sliced
Directions
1. In a large pan over medium heat, sauté ginger, garlic and onions, 5 minutes.
2. Add curry, maple syrup, and lime juice stirring for 1 minute.
3. Add coconut milk, potato, broccoli, cauliflower, and peas. Cook 15 minutes.
4. Add tamari to taste.
5. Serve over top basmatic rice with squeezed lime.
